<h4 class="dechead">On One Hand: Aluminum Pressure Cookers are Structurally Solid
While aluminum isn't as sturdy as stainless steel, modern pressure cookers in general are safe as long as they're used with reasonable care and only as directed. Safety features used to keep pressure cookers from blowing their lids include more accurate pressure indicators, quick-release mechanisms for steam, spring valve pressure regulators and heavy, multi-ply bases.
On the Other: The Aluminum Itself May Be Dangerous
As UCLA's Dr. Melvyn Werbach and others have pointed out, aluminum has been tentatively (though not conclusively) linked to Alzheimer's disease and other forms of dementia in a number of studies. The aluminum can enter the body when acidic foods chemically react with the aluminum in cookware, binding it in a form that can be consumed.
Bottom Line
All modern pressure cookers are reasonably safe from a structural perspective, but food prepared in aluminum cookware can become contaminated with the metal. Consumption of aluminum has been linked to dementia. Though that claim is disputed, from a health perspective your best bet is to avoid aluminum pressure cookers altogether.
