During digestion, the human body converts excess calories into triglycerides. Triglycerides remain in fat cells until released by hormones when energy is needed. High triglyceride levels occur when more calories are consumed than depleted. According to the Mayo Clinic, a normal level of triglycerides is less than 150 mg per dL. Anything over 200 mg is considered high.
