The seeds of amaranth can be used to make a hot porridge, much like oatmeal. However, unlike oatmeal, when cooked, amaranth becomes sticky. The taste of cooked amaranth is slightly sweet and nutty. The seeds can be heated in oil and popped, which gives them a flavor reminiscent of puffed rice.
On the Other: Buckwheat is Assertive
Roasted buckwheat has a strong, bitter taste while unroasted buckwheat has a more subtle nutty flavor. It is used to make porridge as well as noodles, beer and as flour. Roasted buckwheat is often sold as Kasha, which is a Slavic word for porridge. Noodles made from buckwheat are known as soba noodles, which have a sweet, nutty taste.

Deciding whether amaranth tastes better than buckwheat is a matter of personal opinion. If you enjoy mild tasting, sweet foods, you will favor amaranth porridge over buckwheat. However, if you like bitter, assertive foods, then you will find that buckwheat tastes better than amaranth.
