<h4 class="dechead">On One Hand: Nutritionally superior
According to the National Bison Association, researchers at North Dakota State University have shown that bison meat has a fraction of the fat and calories found in beef, with greater amounts of protein, iron and vitamin B-12. Researchers have also shown that bison meat has more iron than beef, pork, chicken or fish. The U.S. Department of Agriculture reports that, unlike most beef cattle, bison feed on grass, roam freely and do not receive chemicals or antibiotics.
On the Other: Costly, hard to find
The U.S. Department of Agriculture reports that bison producers slaughter approximately 20,000 bison each year; conversely, beef producers process 125,000 beef cattle per day. Because of lower production rates, bison meat is much more costly than beef. The National Bison Association notes that bison is a gourmet or specialty meat, and only certain retailers sell it.
Bottom Line
Bison meat is better than beef, offering a nutrient-dense food that is low in calories, fat and cholesterol, but consumers will pay more for its nutritional superiority.
