According to the Center for Science in the Public Interest, sweet potatoes are very nutritious and high in vitamin C, potassium, fiber and carotenoids. Potassium and vitamins A and B6 are also found in high amounts in sweet potatoes, and they are very low in sodium. Sweet potatoes are also fat free.
On the Other: Nutritional Deficiencies
Adult females need 46 grams of protein daily and adult males need 56. Sweet potatoes contain only 4 grams of protein, per serving. Sweet potatoes are low in iron, calcium, vitamin B12, selenium and zinc, all of which are needed for a healthy diet.
Bottom Line
Many people don't eat the skin of the sweet potato, which is the part that provides the most fiber. Sweet potatoes provide many nutrients, but they do not meet all of our nutritional needs. Additional protein and vitamins are needed in order to stay healthy.
