Quiche can be frozen before or after baking. According to the University of Missouri Extension, frozen unbaked quiche is safe to use up to a month after first being frozen. Baked quiche can be frozen up to two months. Once prepared, quiche should be only stored for a maximum of three days in the refrigerator and should be frozen if needed past three days. Freezing is a way to keep quiche longer and prevent the growth of mold or bacteria.

Egg whites, cooked in foods, can become tough or rubbery when frozen, notes the National Center for Home Food Preservation. Freezing can also change the flavor of spices; for example, pepper and garlic sometimes turn bitter. The texture of the crust can change as well.

Freezing quiche is safe; however the flavor or texture may be changed. Slightly undercooking quiche before freezing will prevent overcooking when reheating. Wrapping a baked quiche after it has completely cooled will avoid condensation when freezing which can make the crust soggy.
