I commute almost every day of the year and can carry everything I need in panniers attached to a rear rack on my bike.
Most days, I only bring a change of clothes, which fits in one pannier.
when I need to carry additional items, or I feel like doing some grocery shopping on the way home, I'll bring the second pannier. On the rare day I need to carry a lot, I'll bring both panniers and wear a backpack.
Several folks in the city regularly ride cargo bikes, which are not especially practical for everyday riding, but can really carry a huge load.
I can (and do) carry just about everything I need. I wish it was easier to carry my laptop, but I do it anyway in a basket.
