Chicken and other poultry are very popular in a wide variety of dishes. A big part of their appeal is due to seasoning. Colonel Sanders, for example, became famous for his secret blend of 11 herbs and spices. While commercial poultry seasoning is available at your local grocer, you can easily make your own poultry seasoning at home with ingredients in your cupboard. McCormick's poultry seasoning is a combination of thyme, sage, marjoram, rosemary, black pepper and nutmeg.
Classic Recipe
The base ingredient for the classic poultry seasoning is sage. The somewhat peppery taste of sage has long been used to add flavor to fatty meats, and this spice certainly sets the tone in traditional Thanksgiving fare. To a measure of powdered sage, add half as much ground marjoram. If you are using 2 tsp. sage and 1 tsp. marjoram, add 3/4 tsp. ground rosemary and 1/2 tsp. each of nutmeg and black pepper. Some recipes also include a small amount of ground celery seed. Mix the ingredients and store in a sealed container.
Mojo Chicken
Another popular poultry seasoning is called mojo, a Carribbean Spanish word for marinade. Mojo is based on bitter orange juice, to which olive oil and minced garlic have been added. To 1/2 cup juice, add two cloves of garlic and 1 tbsp. olive oil. Round out the flavor with 1 tsp. each of paprika and oregano, and 1/2 tsp. each of salt and red pepper flakes. Let your poultry soak in this mixture for at least an hour before cooking.
Cajun Seasoning
Another popular poultry seasoning is the cajun preparation often referred to as blackened seasoning. This seasoning is based on paprika and cumin. To 1 tbsp. each of these two spices, add 2 tsp. each of garlic powder, onion powder and black pepper. Add 1 tsp. each of dried thyme and oregano. To give this seasoning its characteristic kick, add ground red pepper to taste.
