Randy Couture and BJ Penn have both fought to contention and then won and defended titles in multiple weight catagories at the UFC. In my mind, that involves fighting the majority of the best available.
Chuck Lidell has done a lot. Outside of the UFC, Fedor has been on the scene at a high level for many years. The same is true for Dan Henderson, Wanderlei Silve and Nogeira.
Two often forgotten fighters are Jeremy Horn (biggest fight record in MMA?) and Jason DeLucia (who was in UFC 1 and then continued to fight prolifically in MMA and Pancrase events until 1006).

When I raised this question, I thought of Hulk Hogan. He has wrestled over three decades in different wrestling promotions both in the US and in Japan. He has faced everyone from Jesse Ventura to the Road Warriors to the Rock and Brock Lesnar. He has faced the "who's-who" of each decade in each wrestling promotion.
Wu Shu is a Chinese martial art but what does Wu Shu mean and how do it's disciplines differ fro Kung Fu and Karate?

I understand why slight Asian women can knock out a man with their kicks. But how can their punches possibly hurt having such slender arms?
