Sour cream contains Streptococcus lactic, a bacteria considered helpful that is purposely added during manufacturing of cultured dairy products. The bacteria grow into lactic acid, which thickens the cream and creates the flavor associated with it. Other forms from the same group of bacteria are used to make yogurt and cheese.
