Early in his career: "The Ipcress File." In addition to Caine's deadpan humor, the plot has a lot of double- and triple-crosses. Very intriguing stuff.
Later in his career: "Get Carter." Caine is terrifying in this one, as a gangster out to avenge his brother's death. You know that nothing, absolutely nothing, will stop him. (It was remade with Sylvester Stallone, but the less said about that the better.)
