Tricky without seeing it - if it froths then it should be ok, but if it's a bit of a weak froth, then I'd add extra yeast to the recipe to give it a boost. The test doesn't have to double in size, only the dough.

Bubbles show something is alive in there. It may not be everything, though. You may want to try baking a small loaf of bread, to see how it turns out.
I have an old jar of yeast (more than 6 months opened, refrigerated) that didn't do too well on its own, but made a beautiful loaf of bread with a little wheat gluten added. You may try that, if the first loaf doesn't work.
Yeast doesn't "rise"!
Whatever ingredients you mix with it to make a dough rises.

You're reading For bakers who bake with yeast: I've had this jar of yeast in my cupboard for a few months and didn't refrigerate it. I've tried to let it rise in warm water with honey & it did a bit. Should it double in size or should I merely expect to see bubbles?

Hey, Pistachio!! Great to hear from you, too! :) My first batch did rise a bit. I think the problem had been that it wasn't warm enough to rise properly because my second batch rose fine.
I was baking pizza from scratch --- a new one for me, but think I'll do it more often. It sure is cheaper than picking up a pizza from the pizza place in town!

Yes we are well, thank you for asking! I like to make pizza: on low and slow, heat sliced tomatoe, musnrooms, onion, It'l sausage.Toast french bread slices first, then melt on top your favorits cheese, then add the rest in layers, and top with another layer of cheese ! Takes a little longer, but the individual pieces are great for parties ! +
