For bakers who bake with yeast: I've had this jar of yeast in my cupboard for a few months and didn't refrigerate it. I've tried to let it rise in warm water with honey & it did a bit. Should it double in size or should I merely expect to see bubbles?

    Trissinger !!! WOW So nice to hear from you, glad you're still out there somewhere ! But I would toss it and buy new, with yeast, there could be a problem, and you don't want to ruin your dish. Have a very special Thanksgiving ! 8) +6

    Tricky without seeing it - if it froths then it should be ok, but if it's a bit of a weak froth, then I'd add extra yeast to the recipe to give it a boost. The test doesn't have to double in size, only the dough.

    yeast activity shows it is alive(that little bacteria) when it bubbles up

    Bubbles show something is alive in there. It may not be everything, though. You may want to try baking a small loaf of bread, to see how it turns out.

    I have an old jar of yeast (more than 6 months opened, refrigerated) that didn't do too well on its own, but made a beautiful loaf of bread with a little wheat gluten added. You may try that, if the first loaf doesn't work.
