• It's called protocol and diplomacy.
  You don't just go up and high-five the queen of England, and you don't greet and Emperor without showing due respect. The fact that we are a democracy with an elected president does not preclude us from showing due respect to leaders of nations with different governmental systems and structures.
  If being non-un-American means showing disrespect to every nation other than our own, then I am by all means un-American.

• I don't think either ever met the King of England, and regardless it was Jefferson who started the tradition of not bowing. As a matter of fact, I think today Americans probably won't bow strictly for diplomatic protocol (as still seen in parts of Europe), but will bow in countries where bowing is mainstream (like Thailand).
