There isn't much symbolism behind the Walls of Jericho. They were the thick walls of a city, which fell to Joshua by his following the directions of the Lord. God had promised them the land of Israel (Israel and Judah during the period of the divided Kingdom and later the northern Kingdom would disappear). The city of Jericho was a strong hold of the Philistines and was taken over.
The walls of Jericho symbolized opposition of the Cananites to the invasion by the Hebrew tribes. As the "chosen people", they felt entitled to the land and justified in committing genocide to possess it. +2
