Well he mentioned in an interview once for 'Don't Pass Me By' (one of the few beatles songs he had written) that during that time he could play the guitar and the piano, but that he could only play 3 chords.
In his song 'Early 1970' he mentions these lines:
"I play guitar A-D-E
I don't play bass 'cause that's too hard for me
I play the piano when it's in C"
He plays the guitar, the piano and the drums in that song.
I also know that he played guitar on a song called " You can't fight lightning" with
Paul McCartney on drums.
On that album 'Ringo Rama' he has a short song titled "I really love her" in which
he plays all the insturments.
