  • Not exactly. It's because the heat gets to the outside edges of the cake sooner and so it stops rising since it cooks quicker. The center keeps right on rising. A way to even that out is to get cake strips that you wet and attach around the sides of your pan and then help keep the temperature even in the pan, getting the cake to rise evenly. Try Magic Cake Baking Strips. They are fabulous!!!
