The check engine light wont turn off until
a: 40 consecutive engine warm up cycles have occurred without the problem reoccurring. or:

b: you use a scan tool to clear the computer

You should be aware that catalytic converters can be poisoned be a poor running engine and the damage may have been done and the vehicle may need more parts to complete the repair

Also there are parts called Oxygen sensors that have about a 100,000 mile life. They tell the computer how much fuel to give the engine. They become fouled and give poor readings, and should be replaced when you do a complete tuneup or have converter issues.
The ones upstream of the converters are the most crucial as they directly signal the air/fuel changes when the engine is running.
The ones downstream of the converters tell the computer how efficiently the catalytic converters are working
