Because standing up, just you, in front of a whole roomful of people is a fairly arrogant thing to do. If you don't use some level of self-deprecation, you will come over as an arrogant fool unless you are very, very good indeed. The very best, especially those with a Name, don't need to. But if you are not well known, and if even a single joke falls flat, you had better have some humility banked with the audience.
I think Henny Youngman and Rodney Dangerfield started it. If done right, it is very funny.

I'm loving this question. I totally agree that you use the self-depricating thing. They have been for a long time now. I think it's because most comedians are liberals and thus naturally think that way. They make fun of themselves getting wasted, doing stupid things or in more obvious ways, acting like a geek, or whatever. I think we need more conservative comedians out there to make fun of others (instead of themselves). That's always funny--but it's become politically incorrect. There's always some group who's going to complain about being offended. But we need more producers and comedians who say, 'Who gives a shit' and just run it anyway. That would be great. But yea, I agree with you. I'm tired of 'So, I'm asian and my dick is amall. It's so small. . .' or 'So, I'm fat. I'm so fat that I break the toilet when I sit down.' We're definitely overdue for something different.
