The cholesterol content of one large egg, approximately 215 mgs., equals 71 percent of the daily recommended consumption of cholesterol. Almost all of the cholesterol is contained in the yolk. To reduce the amount of cholesterol in the diet received from eggs, eat two egg whites for every one yolk, or eat egg substitutes.
