Yes... Your mother's uncle is your Granduncle. His son would be your 1st cousin (once removed) HIS daughter would be your 2nd cousin. LEGALLY you can. You, she, your and her families would have to decide whether it's worth the chance that if things go wrong, there could be a split in the family.

I think shes actually your third cousin, her father would be your second cousin which would make her your third cousin. In Ireland thats illegal as there is a much higher chance of abnormalities with the childern
