Thanksgiving dinner: canned sweet potatoes or fresh sweet potatoes/yams that you have mashed?

The trick to this is a hot oven 400+. You want to turn them a couple times while cooking. Place them on a piece of foil sprayed with cooking spray. Cooking at a high temp helps to carmelize the sugars so they come out sweet and creamy like. The foil will keep the sugars that ooze out from dripping on the floor of the oven and burning and smelling like burned candy.Poke them with a fork first just like a regular potato
