nope. I have left flour at room temperature for months. but as soon as I can afford it I will get a mill and make flour as needed. I'll just keep whole wheat berries at room temperature

I keep my bread flour in the freezer because I buy it in bulk. I pack it in five-pound bags and when I start using one I keep it in the fridge. My regular flour I keep in a sealed jar.

Yes, mom has always been doing it and so do I. Keeping unwanted 'guests' (bugs) out and it stay fresh longer.
