  • Don't buy a risotto at a restaurant, it is something that you should always make yourself if you want it at its best due to the length of time you have to stand at the oven and stir the bloody thing. I have mega doubts that the majority of restaurants, other than the top class ones, actually cook it to order fresh and properly.   • there are a few types of rissotto but for the most part they are a long grain rice that is able to absorb flavor and release starch. Its basically a stick large rice but needs to be cooked correctly with herbs and spice(usually mushrooms) to properly absorb the flavor and release the starch. It is not cooked in water as with most other rice, but instead is cooked with stock.
  • Unless it's a really great restaurant, and Olive Garden doesn't qualify, don't eat risotto out. It's a simple rice dish that takes care and time to cook properly. It involves short to medium-grained rice (a starchy sticky rice), additional flavorings and some kind of liquid that is stirred into it slowly over 20-25 minutes, a little at a time. It's stirred constantly and gets almost like a rich, creamy pudding of rice.
