This probably sounds strange but I'll saute some chicken and eat it with pickled ginger and wasabi paste. It doest take a lot of effort or time and to me tastes great

I cook like crazy on the weekends and freeze it.I have this really great vacuum sealer that helps. Soups, Chili, Stews, Lamb, Pork and Beef roasts, sliced with gravy. Sloppy Joe's, Taco meat, Sh#% on the shingle, Chicken baked, fried, etc. So I have a wide choice during the week that just needs heating with sides of pasta, potato's, salad, veggie, whatever. Makes my life much easier and my husband always has a nice three course meal to come home to. That he can make himself if need be, because the main course is already done.
I freeze the bags flat on a cookie sheet. Then it stacks well in the freezer. I really hate eating the same thing all the time and this way I can eat what I want and he can eat what he wants.

Pasta or rice. You don't need to stand around and
watch it boiling. Then You can add some canned
veggetables inside if You're too lazy to cut
    anything, etc.
You can also fry eggs, meat or fish with
    some basic spices.
    .
If You're organised and experienced, it all takes
very little time of actual work and not much more
    of waiting.
