Birds usually sleep on the perch. Fish have a sort of shutdown mode in which they are able to keep swimming and performing basic functions while resting their brains. Dolphins can apparently sleep half their brains at a time.

Depends on the species of birds. Some like low bushes and shrubs. Some sleep in man made structures like barns. Wild Turkeys usually fly up into the branches of tall trees so predators can't grab them. They all do different things.

Birds, mostly perched somewhere, be it a tree branch, their nests or other appropriate setting. Researchers have found that some birds even sleep in mid-flight in short intervals.
Fish: I think ImAlec explained it perfectly.

Birds "roost" in the limbs of trees or other high places or while sitting in their nests. I have only observed the fish in tanks and they will nestle in the plants or other fixtures, I assume they may be sleeping.

Fish: with their eyes open, they just settle to the bottom and dozes off.

Birds: Some are capable of doing it with half of their brains at a time. Half would sleep while the other half watches out for danger.

Of course they sleep. I'd assume that fish sleep underwater, and birds sleep in their nests or wherever they happen to be at the time.
