You use the back edge (spine) of your knife to push them off the skewer and onto your plate. Place the skewer across the back edge of the plate and eat with a knife and fork.
In a formal setting shrimp (and other things) should be separated from the skewers before ever reaching the table.
Eating shrimp is like eating friend chicken.
You do it with your hands.
There is no graceful way to eat shrimp on skewers, except with your fingers.
Keep plently of napkins near by.
