take everything to the next whole number, for example: cost is 4.65, you receive 20.00. take 65 cents to 70 cents = 5cents. Take 70 cents to 5.00 = 30 cents. Take 5.00 to 20 dollars = 15 dollars, total change back is $15.35. You count the money back to the customer in the same order. Practise doing this and in no time at all you'll have it mastered.
