Offal is a waste product of an animal, if after using an animal product, in this case the thymus or the pancreas to make sweetbread and it is consumed or used for some purpose than it would not be a waste. If on the other hand it was disposed of at least it could be said it had offal within it or if you wanted to use the wider defination of offal to include rubbish in ganeral than yes, sweetbread or darn near anything that is a waste could be called offal. +5
If they're stuffed in your haggis, then I guess they could be. ick.

So if I understand... It is only offal if you do not eat it, and instead toss it in the garbage. If you prepare and eat it, it is not considered offal?

I believe so, as strictly defined. In more general terms some refer to any meat product that is not used as a typical human food as offal - the trouble there is all involved in the conversation may want to agree on what is typical or the viscera may be a flying.
