Sometimes it is for respect. Some of it is to encourage the congregation to be engaged rather than simply spectating.

You stand at the opening and closing hymns because that's when the preacher enters and leaves the congregation whith God's Word for the week and when the Crossbearer (Crucifer) carries the churches cross up or down the ailse. In Biblical times the congregation would be expected to stand whenever passages were read directly from the Bible itself. Whenever you walk past the Alter your supposed to turn towards it and bow to the Lord (Genuflecting). Other times of standing are also determined by when it would be appropriate to show respect for the Lord or His Word. It is also to help people stay awake. Churches can get stuffy.
