Yes, you can become intolerant to lactose. In fact, most people do. There are two forms of the enzyme lactase, which breaks down the sugar lactose in milk. The first form is expressed only in childhood, and the second form throughout life. The second form is not common except in a few populations of humans, primarily Caucasians from northern Europe and a few other populations in which fresh milk is a traditional part of the diet. For those who don't have the enzyme, the sugar is broken down by intestinal bacteria, which produce a lot of gas in the process. Hence the bellyache. One solution is to consume fermented dairy products. During fermentation, the bacteria break down the lactose, so that the resulting product is lactose free and can be consumed by lactose intolerant individuals. Examples are yoghurt, buttermilk,many cheeses, kefir, sour cream, and the "acidophilus milk" you can buy in the store. Another solution is to add lactase tablets to fresh milk and let the enzyme break the sugar down before you drink it. You can buy lactase tablets in supermarkets and pharmacies. The enzyme does not affect the taste of the milk.

The simple answer is yes you can become lactose intolerant at a later age, the reasons are beyond my knowledge.

Not only can you, but people generally do after a certain age. Most people can't digest milk after the age of four.
