Does anyone know how to make a low carb salad dressing that tastes good?

    G'day Anonymous,

    Thank you for your question.

    This is a recipe posted on alt.support.diet.low.carb.

    3-4 tablespoons olive oil, the best you can find or afford.
    1-2 tablespoons lemon juice or cider vinegar
    (or a mix. I like fresh lemon juice best.)
    1 teaspoon prepared dijon mustard
    1 teaspoon dried thyme or tarragon, or 1 tablespoon fresh
    0.5 teaspoon garlic powder
    (or 1 clove garlic, minced.)
    a little finely grated fresh lemon peel, if available

    Combine in small jar with screw top and shake well. Taste, and add salt and pepper if desired. For an extra-creamy dressing, you can add a teaspoon of sour cream or plain yogurt. This dressing will keep a week, refrigerated, just shake it up again. Run the jar under warm water if the oil solidifies in the fridge.

    Gosh yes.
    Balsamic vinegar
    Mixed italian herbs (oregano, basil, garlic, onion flakes, chili if you like)

    No need for anything more...if you want to increase the carbs you can mix in a little olive or canola oil...
    In a true Italian dressing, they would put salt, but I do not...the balsamic is piquant enough.

    I use the Good Season's dry Italian Dressing mixes...that way i control the amount of EVOO that is added...they also have one that doesn't use oil at all. If you can't find the low fat packages i have used the regular seasoning packets and added only a little bit of oil with great success. Added bonus: can also added dried or fresh herbs and it is a cinch to make.

    1 cup Mayonnaise
    2 Tbsp. dill pickle relish
    2 Tbsp. low-carb ketchup
    1 green onion, white part only, chopped
    1 hard cooked egg, chopped
    1/2 tsp. paprika
    1 - 2 packets sweetener, to taste
    1 Tbsp. snipped parsley, optional


    Mix ingredients. Cover and refrigerate. About 10 carbs for entire recipe.
