In the 1980s, the distance between Wyman and the other band members grew due to, among other things, the Mandy Smith affair. After contributing to the 1989 album Steel Wheels, Wyman decided he had had enough and took time to retire. The Stones regretted his leaving but continued to record and tour, using several sidemen, most notably Darryl Jones, to play bass. Wyman has stated that from the late 1980s onward The Rolling Stones' recorded music had become creatively stagnant, that he had lost interest in the experiences of recording and touring with the band, and that it was simply right for him to retire from the band. Jagger has also said that Wyman had developed claustrophobia and had increasingly disliked air travel typical of band touring.

Bill Wyman left the band shortly after the recording on Flash point in 1991, he left because he wanted to do something out side the rollingstones and that was to play in a Jass band he also wanted to persue his other intrests such as a long awaited autobirography called Stone alone he also wanted to things out side that world the rolling stones which he has been for 30years and he no longer wanted to tour and the hectic life of always traveling, he later put together a book of all of the things the rolling stones have everdone it was really good it had like the first rolling stones tickes to recording schedules and play lists yea it is a really informative book and I forgot the title I know it came out in 2001-=2002

As a musician I would say guess to say he was tired of touring. Tired of the game and the politics and tired of the egos he was surrounded by. The need for space and follow his own calling and personal happiness. Whatever his reasons as told to others I think those are probably the most deciding factors. I personally cannot see being around ego maniacs like Jagger and Richards for that long. It's amazing he lasted, I guess money and success allows you to put up with a lot.
