Many reasons...but for us humans, it's where we raise our food.

Well, soil is important, trees find it difficult to fix their roots in air or water and rock impenetrable. Mangroves do okay in water but underneath that, soil is what they cling to. I like to eat things with my meat so the vegetables need somewhere to grow and my meat needs to eat things that also need somewhere to grow. Soil comes in different forms, ie. heavy, clay, loam, sandy to name a few and it is basically in one form or another underneath everything we walk on. So unless you can think of another thing to walk on (and unless you are Jesus and can walk on water), I guess soil in all it's variety is important.
