isn't it unfair that "at will" employee's can be fired without reason but we are expected to give 2 week notice if we want to quit

I am a school librarian, soI teach; science, social studies, computer skills, and reading skills.
I don't know what I'd do, maybe tutoring or corporate librarian.

It's OK. School librarian isn't really like being a librarian, it's more like being an extra teacher.
The pay's the same as being a teacher, but I am never bored.
