As far as I know, you cant. Synching your ipod with itunes will automatically delete their tracks unless you have all their tracks on your library. There are some free ipod 3rd party softwares that can copy all of their tracks off their ipod before you synch ( and then you can add them to the library).

You may want to set up a new library before you plug their ipod in too, otherwise you'll be in danger of changing your own ipods library.
Its the one thing that makes Ipods a pain - Itunes.
