  • I've made mayonnaise from scratch before, it is not that difficult and it uses raw eggs. You want to use it up within 24 hours when you make it fresh. Some recipes call for blanching the egg yolk so it's not raw, and some manufacturers actually cook the egg at a low temperature. Vinegar helps preserve it somewhat, but cannot make a bad egg good.
