'The Jazz Theory Book' by Mark Levine is probably the most well known. It's good for most concepts, but I found Dick Grove's book, 'Arranging Concepts Complete' to be much more useful. It is technically written for composers and arrangers, but it has a lot of useful information even if you would not be actually writing music.
