Fresh fruits and nuts are my favourite.I also love soda water.
Wife and i usually eat a veggie sub from Subway.
We do this because it can be eaten while driving and makes a lot less of a mess than other foods.
And, its not loaded with calories.
fast food snacks and or packed foods in a cooler. Sometimes stop somewhere to dine but the above had been more my experience.

i ALWAYS have teddy grahams on road trips. and salsa chips. those chips that are salsa flavored, so you don't actually need salsa.
well when ever we drive down Melbourne way i always stop at the servos and get the pork crackling chip things, i have no idea why!! but i do.
Any other time we go on a road trip i always take salt and vinegar chips, or burger rings... coke and water (oh arent we a healthy lot ;p)
and to top of the healthy kick... we usually stop at Renmark to get some McDonalds or KFC hahaha (that is because the road trips we take are usually to Melbourne to to Adelaide)
Fruit, granola, crunchy stuff and filling stuff that doesn't need to exit any time soon.
likely something like chips, sanwiches from home and some malta goyas in a cooler full of ice, MD is nasty :s

I bring my own sandwiches and fruit... and inevitably stop off at a service station and buy a box of cookies!
Fast food or veggies and snacks purcased prior to leaving.
Here in Pennsylvania it would be Vegemite sandwiches. Hands down. how about you?
Local cuisine and foods I can't purchase in my home state.
Its a beaufiful day and you are given the choice/freedom to be driving anywhere,where are you driving? Why this place?

Thanks,I never did like the junk food that seems prevalent at rest stops or gas stations.
