I know how to block images and flash content on my browser, but is there any way to block contact with a specific website like "google analytics" that just serves to spy on you and force feed you ads?

    Use Firefox with the Noscript plugin. That allows you to selectively block any scripting sites and allow others in. Nobody should be without it.
