  • Put a good cookbook under your pillow. It will all seep in through osmosis. Honestly, why do you think people become great chefs? Because they go to school and work in restaurants. Why should you be able to do it a different way without paying your dues and doing the work?
  • Many years of practic8ing at home might teach you how to cook but you will never get to be a chef that way. You have to cook with others to be a chef. A chef is in charge of a whole kitchen or his area and works under pressure, efficiently and timely. I just don't think that you can place yourself in those kinds of conditions at home. But you can become a very good cook from studying cookbooks and learning from friends that know how to cook.

It will take time as I'm sure you know, but here are three resources that will be helpful: 1) The Joy of Cooking by Rambauer, a great cookbook. 2) Two books by Jacques Pepin; La Technique & La Methode - both in English with excellent photos and text. Find used oversize paperback editions online - these will become favorites. 3) Watch every episode you can find of Good Eats with Alton Brown.
