Because traditionally, weekends are supposed to be the time that people rest from working all week. If you've been working all week, then you probably want a break too. The businesses that stay open on the weekend are catering to the consumer that wants to spend more money and they are willing to stay open to make that extra money. However, you'll typically find that the regular weekday staff is not the same staff that is working on the weekends, so there is a trade off.
