  • Vegetable oil is better for frying because the extreme heat needed will burn the olive oil and ruin the flavor.
  • The oils are of different molecular lengths and have different flavor enhancing impurities. You want vegetable oil to cook your tater tots BUT if you are going to dip them in oil afterwards the extras got hard in the fridge and microwave them then I would suggest olive oil.
  • While all fats are the same calorically, nutritionally olive oil is better because it is lower in saturated fat (~15%) and higher in monounsaturated fat (~75%). It is also high in antioxidants. As far as taste is concerened, it is all personal opinion. A healtheir choice would be to bake or broil them.
  • Olive oil is very healthy and flavorful but Extra virgin is best saved for fresh or raw use. Olive oil can be used for pan frying or rubbing on meat and veggies when roasting, but since it's got a low burning temperature you shouldn't use it for deep fat frying and you need a different veggie oil. There are some blends that work well they sell them just for that purpose, but if you can afford it, for frying, it's best to use peanut oil. Second best would be soybean oil. But be aware that every time you heat up the oil very high you are lowering what it's flashpoint is so if you are going to reuse the oil, be very careful. Soybean oil loses it's good qualities quickly, sometimes as much as 50 degrees. If it's for a one time use, like pan frying I wouldn't worry too much. You didn't say how you were going to cook the tater tots, but if you are going to pan fry them, or in shallow oil, peanut or soybean, even canola would be fine. If you are going to deep fat dry them, peanut is best and save the oil for another use.
