Maybe you should do some breathing exercises. It would stand to reason that you are out of breath if you are going past your energy limit.

My sifu always tells me to breathe from my stomach. You should feel the breath in your stomach, and not so much in your chest. It's a little hard to get the hang of breathing this way. You also could just be out of shape cardiovascularly, depending on how you practice kung fu. Try adding some running or swimming to your day, and see if you can build some more endurance.
