Charbroiling is a better means of cooking meat to well-done or near there instead of broiling it au jus because of the speed and tenderness it can maintain. It also does not dry out the meat. However, studies have shown that charbroiled (and barbecued) food may contain benzopyrene, a known carcinogen.   • Cooking beef, fish, poultry, pork and veggies a grill or spit over an open fire. It is generally referred to as Barbecue (BBQ) which is the Englishized Spanish term for Barbacoa which its an entirely different process than grilling/charbroiling. Unfortunately I have never had any luck with BBQ beans as they keep falling thru the grill...
