Since the name does not end in the letter S, "Clausewitz's" is correct. In some circles, if the word ends in S, when you PRONOUNCE the name you can leave the last syllable off - "Mars moons" vs. "Mars-es moons." But I find this is becoming less common, even though it is correct. You could probably get away with this since the Z and S ending sounds are very similar. Where did I learn these rules from? I don't recall. Take it from someone whose first name ends in S. :o)
