It means to turn live type into an object. Once you convert it, you can't go back and edit the type. A good reason for converting type into outlines is when you create something in a specific font, and say you want to send this illustrator file to another computer that doesn't have the font. If you send it without converting to outlines, and that computer doesn't have the font, you won't be able to see it. If you convert it, then you will see it exactly the way it looked. Does that make sense? Sorry if I confused you. :-)
