Why is it that parents say their child is old enough to do something; instead of mature enough to do something?

Good point. What they must mean is mature enough. Some people are quite mature in their early teens and some never seem to grow up. :)

Hmm well it saves parents from having to exsplain what mature means. Especialy with young kids. I do it with my 2 year old. Not only the whole exsplanation but also kids that are young might not understand or even be able to pay attention long enough for an exsplanation of what mature means. Short and simple thats my theory
