I don't have time to read and summarize all of these for you, but they should be more than enough to get you started. The womenfolk website seems pretty in-depth, but it only talks about quilting in the United States. The reddawn site is also just about America, but it is much shorter and in a time line form. The others provide a quick overview of quilting in general. They should give you an idea how to search for more information on whatever part of it you are interested in.

People have been using the art of quilting for as many centuries back as we can find information. In the middle east, it was very common for women to take older thinner blankets and sew them together in several thicknesses with tiny stitches all over the blanket. This is the process we now call quilting.

Sometimes the stitching formed figures that illustrated a story.

In the US the process of quilting took on a new form when women started taking small pieces of fabrics and sewing them together, then adding filling and backing which are then sewn together with tiny all over stitching. Now they could make story quilts by forming the pieces as well as the stitches.
