What makes it different is the strain (sativa, usually fruity flavoured and with a funny-high, also used to make hash, or indica, that has larger buds), the cultivar is what really makes it different.
The cultivar is a plant that a grower has selected after years of inter-breeding natural marijuana plants. After only fifty years unique cultivars are generated by growers that all have slightly different flavours and different types of high.
If your question is why very weed tastes different, that is because of the incredible genetical complexion of a simple plant like pot. I guess the difference in the "stone" or high lies in the genetical differences, but also growing methods, the use of lamps, the use of hydroponics (sometimes hydro grass tastes bad) or... god I'm completely wasted!
