I depends on the cultivar but for the kind we generally eat it would be when it has brown spots as this indicates that the starches have turned to sugars. My .02

It is technically ripe when the skin is yellow,but you will find when you buy them from the store,even though they look ripe they are not.You will notice they are hard and not tasty.The processors use a type of gas to make them turn yellow.They do this because unripe bananas do not bruise as easy,and stay longer on the shelf. I am not to sure if the gas used,is healthy for the body.

When it is a darker shad of yellow, is soft but not mushy. Then it's time to eat.

Yellow skin, maybe just a hint of brown spotting. Some like it further along. But if you get them too green they aren't very sweet and you have to wait longer.
